A North African and Middle Eastern classic, shakshuka features eggs poached in a rich tomato and pepper sauce, often topped with herbs and cheese. It’s hearty, healthy, and made entirely in one pan.

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 4 garlic cloves, minced
  • 1½ tsp each cumin & smoked paprika
  • ¼ tsp red pepper flakes
  • 1 (28 oz) can whole tomatoes
  • Sea salt & black pepper
  • 6 large eggs
  • 3 oz crumbled feta
  • Fresh cilantro, chopped

Instructions

  1. Sauté onion and pepper in oil for 5 mins. Add garlic and spices, cook 2 mins.
  2. Add tomatoes, break them up, and simmer 5–10 mins until thick.
  3. Make 6 wells in sauce, crack in eggs, sprinkle with half the feta.
  4. Cover and cook 3–6 mins, depending on yolk preference.
  5. Top with remaining feta and herbs. Serve warm with bread.
