What Makes These Blueberry Cupcakes Special?

Unlike traditional cupcakes, this recipe uses a dual-flour base—cake flour and all-purpose flour—which results in a tender, bakery-style crumb. The unexpected addition of fresh blueberries not only adds flavor and moisture but also creates bursts of fruit in every bite. Topped with smooth cream cheese frosting, the result is something reminiscent of a blueberry cheesecake, but in cupcake form.

How to Make Blueberry Cupcakes

1. Prepare the Batter

Preheat oven to 325°F. Line 24 standard muffin tins with paper liners. In a large mixing bowl, combine both flours, sugar, baking powder, and salt. Add room-temp butter and mix until coated with flour.

In a separate bowl, whisk together eggs, milk, and vanilla. Gradually mix the wet ingredients into the dry, scraping down the bowl between additions. Beat until just combined.

2. Add Blueberries

Toss blueberries with flour to prevent sinking. Gently fold them into the batter.

3. Bake

Divide batter evenly among liners, filling each about ⅔ full. Bake for 18–22 minutes, rotating pans halfway. Cool completely on a wire rack before frosting.

Making the Cream Cheese Frosting

Using a hand mixer or stand mixer fitted with a paddle attachment, beat cream cheese and butter until smooth (about 5 minutes). Slowly add sifted confectioners’ sugar on low speed until incorporated. Mix in vanilla, then increase speed and beat for another 5 minutes until fluffy.

Pipe or spread frosting over the cooled cupcakes. Garnish with a fresh blueberry or lemon zest, if desired.

Frosting Variations to Try

  • Lemon Cream Cheese Frosting: Add 1 tsp lemon zest + 1 tbsp lemon juice

  • Vanilla Buttercream: For a classic, extra-sweet option

  • Lemon Blueberry Frosting: Mix in mashed blueberries + lemon zest

  • Marshmallow Frosting: Light and airy, great for summer

  • Whipped Cream Frosting: Subtle and creamy, best served fresh

Storage & Freezing Tips

Short-term:

  • Unfrosted cupcakes: Store at room temp for 1 day

  • Frosted cupcakes: Refrigerate up to 3 days in an airtight container

Freezing options:

  • Unfrosted: Wrap individually, freeze in zip-top bags (up to 2 months)

  • Frosted: Freeze on a tray until solid, then wrap and store (up to 1 month)

To thaw: Let sit at room temperature for a few hours. Whip frosting again if needed to restore texture.
